Baby, it’s cold outside. This week we got several inches of snow here in NC. The kids were out of school. Several businesses were closed. And we have every heater in the house on. But sometimes you just want to warm yourself up on the inside, too. This tasty Guinness Onion Soup Recipe is just what you need. Oh, and it cooks in the slow cooker, so you can spend those snow days curled up with a nice book.

Guinness Onion Soup Recipe

This Guinness Onion Soup Recipe is pretty easy to make and doesn’t take that many ingredients or time to prepare either. Most of these ingredients are ones that you might already have on hand, too. So, you might not even have to make a trip to the grocery store. ๐Ÿ™‚

Guinness Onion Soup Recipe | Eat Play Rock

You Will Need…

4-6 Onions (About 8 Cups), thinly sliced
5 Garlic Cloves. minced
2 tbsp. Light Butter
6 cup Reduced Sodium Beef Broth
1/2 C. Guinness Draught Beer or Guinness Extra Stout Beer
1 tbsp. Reduced Sodium Soy Sauce
1 Bay Leaf
1 tsp. Red Wine Vinegar
1/4 tsp. Dried Thyme
Salt & Pepper To Taste

To Prepare…

*Place onions, garlic, and butter into your slow cooker.

*Cover and cook on high heat setting for 45 minutes to an hour or until onions begin to soften.

*Add broth, Guinness beer, Soy Sauce, Bay Leaf, vinegar and spices into the onion mixture.

*Cover the Guinness Onion Soup and cook on low heat 6 to 8 hours or high heat setting 3 to 4 hours.

*Once the soup is finished, be sure to remove the bay leaf and serve.

    My husband loves a good onion soup! What a great recipe, I should try this for him sometime. I can’t eat it, it gives me the worst heartburn…thanks to having kids. lol.
